Pantry staple - chickpeas!

As a vegetarian, chickpeas are an absolute essential in my pantry. I keep a good stock of them at all times for throwing into soups, chili, stews, hummus and for simple side dishes. One of my favourite, simple meals is stir-fried chickpeas with garlic, lemon juice, sesame oil and cilantro. It only takes about 10 minutes to prepare and cook, and is deliciously aromatic, flavourful and full of iron. Also:

- Chickpeas are a rich source of fiber, which helps to lower cholesterol and prevent heart disease.
- One cup of chickpeas provides 25% of your daily suggested value of iron.
- Their high fiber content helps stabilize blood sugar levels.
- Chickpeas are a source of molybdenum, which helps eliminate nasty sulfites in our body. Sulfites are the preservatives commonly added to prepackaged foods.
- Chickpeas are virtually fat-free.
-  One cup of chickpeas provides 84% of the suggested daily value of manganese, needed for antioxidant defenses and energy.

2 Tbsp sesame oil
2 cloves garlic, minced
    1/2 - 3/4 can of chickpeas, drained and rinsed
    Lemon juice squeezed from half a lemon
    Handful of cilantro, chopped

Heat oil in a large pan until hot. Add garlic and chickpeas and cook for five minutes on medium heat. Mix in lemon juice and cilantro for the last five minutes of cooking. Serve and enjoy!
